Since I'm not getting to stay at home, I'm getting to change up our meals every night. I would normally have a rotating menu that was easy for me when I got home from work and we ate out a lot more because of long days at work. However, now that I am a stay at home mom, down to one income and not to many places to go out to eat which means we eat at home. Sunday, tuesday and thursday are days were we always have a crockpot meal or something easy. Tuesday and thursday I go to the Y for a exercise class. Sunday, so I don't need to run around like a crazy person when we get home from church. (we do fast food sometimes) So here are a few things I've tried from various places.
Mexican Cream Cheese Chicken
This is super easy!!
2-3 lbs frozen chicken
1 can black beans (drained & rinsed well)
1 can corn (drained)
1 package cream cheese
1 can rotel
Cook in your crock pot 3-4 hours high or 6-8 hours low.
Serve over cooked rice!

The thing I like about this meal is it makes a lot! I froze about a quart of it for another meal. I used the other leftovers and wrapped it in a burrito. I did add shredded cheese, lettuce and tomatoes for a different type of meal. Alohi wasn't that big of a fan of this. She has gotten unsure of food she doesn't recognize.
Tortilla Soup
Sorry I can't give you exact measurements of this because I just add things and go with it... Here's what I remember.
chicken broth
black bean & corn salsa (walmart brand)
taco seasoning (to taste)
corn
black beans
corn tortillas peeled apart (add this last and will make broth less soupy)
A few changes that I make are instead of black beans, I used refried beans and don't put corn. Sometimes I put rice in it, instead of tortillas. It just depends on what I have on hand in the house. It is super yummy and easy to make!
Pork Roast
I've also made a pork roast in the crock pot, but forgot to take pictures. I like making pork roast, because we eat the roast with potatoes and carrots one night. Then I shred the pork up. I change the taste up by add taco seasoning. Use the taco shredded pork in burritos or tacos, quesadillas, and put it in the taco soup too!
I have a few other things that I've tried that aren't dinner related and will blog about those as well!
